Baked Chicken Tikka Kebabs

INGREDIENTS

1 lb chicken breasts cut into 2 inch cubes
2 large onions cut into 2 inch pieces
2 bell peppers (red /yellow) cut into 2 inch pieces
2 zucchinis cut into 1 inch rounds
10 large wooden skewers, soaked in water for 30 min

Marinade

1/2 cup plain yogurt
Juice of 1 lemon
1/2 tsp ground turmeric
1 tsp garam masala
1 tsp coriander powder
1 tsp cumin powder
1 tsp garlic powder
1 tsp minced ginger
1.5 tsp salt

STEPS

1. In a large bowl combine all ingredients for the marinade and mix well, setting some aside for the vegetables. Add the chicken to the sauce, making sure to coat all sides and let it marinade for at least an hour or overnight in the refrigerator. The longer, the better!

2. Preheat oven to 400 degrees F and line a large baking sheet with foil paper. Lightly oil the foil

3. Thread the chicken cubes, onion, peppers and zucchini in the skewers, making sure to alternate between everything.

4. Brush the skewers with the marinade that was set aside and place them on the oiled baking sheet.

5. Bake them for 15 min, turning them halfway. Broil for 5 minutes extra to get them a bit crispy.
