INGREDIENTS
1 cup cooked chicken breast, cut into cubes
2 cups baby spinach
1 cup shredded mozzarella cheese
2 TBSP Parmesan cheese
2 large flatbreads
White Sauce
2 TBSP mayonnaise
1 TBSP white vinegar
1/2 tsp garlic powder
1 TBSP Mediterranean spice blend
1 tsp water
1 TBSP fresh dill, washed and finely chopped
Mediterranean Spice Blend
1/4 tsp salt
1 tsp cinnamon
1.5 TBSP dried Rosemary
1 TBSP ground cumin
1/2 TBSP dried oregano
1 TBSP ground coriander
STEPS
- Preheat oven to 400 degrees F
- In a separate bowl, mix throughly the white sauce ingredients and set aside.
- Heat 2 tbsp of olive oil in a pan and cook the spinach until it becomes wilted, approximately 3 minutes.
- Brush the flatbreads with some olive oil, place them on a hot pizza stone and bake for 3 minutes.
- Remove the flatbreads from the oven and spread the white sauce on them. Next add in the following order; the mozzarella cheese, cooked spinach, chicken cubes and Parmesan cheese.
- Bake on a preheated pizza stone at 400 F for 20 minutes.
