
Be excited about breakfast or brunch with this delicious Pumpkin Pancakes
INGREDIENTS
Dry ingredients
2 cups all purpose flour
1 tbsp baking powder
1/4 cup sugar
2 tsp pumpkin spice
1 tsp cinnamon
1/2 tsp salt
Wet ingredients
1 1/2 cups milk
1 cup pumpkin puree (Not 1 can)
2 large eggs
2 tbsp oil
Toppings
Roasted walnuts
Sliced bananas or fruit of choice
Maple syrup
STEPS
1. In two separate bowls whisk the dry ingredients and in the second bowl whisk the wet ingredients.
2. Add the wet mix to the dry mix and stir a few times until everything is combined, careful not too over do it as it will affect the texture of the pancakes.
3. Heat a griddle or frying pan and add 1/2 tbsp coconut oil.
4. Pour 1/4 cup of the batter and cook for about 3 minutes per side or until golden brown.
5. Garnish with toppings.
